How do I Store my chocolate bars? Can I refrigerate my chocolate?

We recommend storing our chocolate bars in a cool, dry place away from direct sunlight. Vital Leaf chocolate bars are tempered and are stored best at room temperature, with the ideal temperature range of 58-73 degrees. If you’ve opened a bar’s wrapper and would like to save the remainder of the bar for a later time, we recommend storing the bar in a sealed bag or tupperware. Bars sealed in their wrapper have a shelf life of 18 months when kept in ideal temperature and conditions.

Some people store their chocolate in their refrigerators; however, the temperature of a standard refrigerator may alter the stability of the natural fats in the cacao butter and could potentially expose it to moisture. There is also the risk of “blooming” which appears as a discoloration on the surface of the bar. While blooming doesn’t mean the chocolate has “gone bad”, it does alter the aesthetic of the bar. Eating chocolate that was recently refrigerated will also melt slower on the palette, which reduces the natural aroma and could result in a less flavorful experience.
